Each piece of miniature food is sculpted by hand from polymer clay, a Play Doh-like substance that cures in the oven.
Contrary to what you might think, creating a miniature sculpture of food isn't just "shrinking it down." I start by researching the real food, often reading recipes so that I can assemble the dish in the proper order. I custom-mix clay to mimic the juicy translucence of peaches, and I dust loaves of bread with chalk for a crusty, just-baked look. Before plating a dish, I'll sketch five or ten different layout options before choosing the one that looks best. Once your piece of mini food has undergone its final baking and glazing, it's a piece of art--not a miniaturized version of a real dish.
